Good afternoon all!

It is steak, wine, and popcorn Sunday for me.  Woo to the hoo!  I just made myself a yummy salad complete with greens, quinoa, sweet potato, cucumber, onion, and beets. And I topped it with Annie’s Goddess Dressing (my fave).

Last night, I made Bourbon Salmon for dinner with a recipe from Cooking Light .  I’m a salmon freak, and Michael said that making this is a great way to get him to eat salmon more often. ;)

I think this is going to make an appearance on our weekly menus!

3 TB brown sugar
3 TB bourbon
2 TB low sodium soy sauce
1 TB peeled grated ginger
1 TB fresh lime juice
3 cloves garlic, minced
1/4 tsp ground pepper
4 salmon fillets (6 ounce)
Cooking spray
1/4 cup thinly sliced green onions
1 TB sesame seeds

Combine first 7 ingredients in a large zip-top plastic bag. Add fish to bag; seal. Marinate in refrigerator 1 hour, turning occasionally.

Coat casserole dish with cooking spray and add salmon and marinade. Put in a 400 degree oven on broil for 15-20 minutes, turning once. Place 1 fillet on each of 4 plates; drizzle each serving with about 2 teaspoons sauce. Sprinkle each serving with 1 tablespoon green onions and 3/4 teaspoon sesame seeds.

I marinated this ALL day long, so it really had a nice flavor.  It might be my favorite salmon recipe yet!
