When I was stuck indoors for for two whole days , I happened to see a commercial for Pull-ups and The Potty Dance on TV.
Oh. my. goodness. I cannot get that song out of my head!!! Has anyone seen it? Apparently, it has been around for awhile, and I am a little late to the Potty Dancing Party.

Tonight I decided to play with a new cookbook that Michael gave to me for Christmas.
I’m so excited about this book and all of the amazing recipes inside. Oatmeal Blueberry Banana Pancakes? Quinoa Banana Apple Muffins? Balsamic Roasted Beets? Whoo to the hoo!
Since I plan out our meals one week in advance (more on that in the very near future) and was already set to make Baked Dijon Salmon , I just decided to make some simple salad dressing.
Making dressing at home is a great option if you’re concerned about the artificial ingredients in the store bought variety. You know exactly what is going into it when you make it at home!
You can also tweak your traditional favorites to suit your tastes.
Michael often asks me to create healthier versions of his favorites, such as Blue Cheese and Thousand Island. And I always welcome the challenge!
3 Tablespoons extra virgin olive oil
2 Tablespoons balsamic vinegar
1 Tablespoon maple syrup
1 teaspoon Dijon mustard
1/4 teaspoon sea salt
1/4 fresh ground pepper
Place all ingredients into a small jar with a tight fitting lid and shake well. Dress salad just before serving.
Tip: Doing the Potty Dance while holding the jar is an excellent way to mix up the dressing. In fact, it is critical.
