I hope everyone is getting over this hump day with ease. Just one more day and then the weekend is here again! Any special plans this weekend?

I’m really trying to take what I said in yesterday’s post to heart rather than letting what I said be empty words. I focused on the things I can do about my situation rather than on the things that I perceive to be holding me back. I went a little crazy applying any job I could find that sounded interesting. I’m being very open-minded about the job search. Really, if it sounded good – coffee shop barista? Sure! Cupcake maker? Yes please!  - I went for it. I had a great conversation with a wonderful long-time friend of mine and told her I had “a case of the shoulds.” She said to me “Chelsea, you’re shoulding all over yourself, you’re starting to smell! Just let what’s meant to be. Follow that big heart of yours.”

Such wise (?) words that got me thinking – and laughing. I’ve been spending so much time shoulding and wrapped up in this idea of what I think I should to be doing that I’m missing out on the many possibilities that could be. Who knows, maybe I could start working at a cupcake bakery or coffee shop and be so inspired to open my own place vegan cupcake business or rustic hippie chic coffee shop. But I’ll never know if I don’t let go of my shoulds and open myself to life’s uncertainties. I’m letting go of the shoulds and going to let the universe have its way with me.

But just as important as being positive about life and letting what will be, is breakfast! And what’s better for breakfast than cake? Well in the form of a smoothie of course. How does a Carrot Cake Smoothie sound? Pretty good to me (I really am a smoothie junkie).

 

2 large carrots

1 cup almond milk

1 large banana + 1/2 frozen banana

1 tsp coconut oil

1 scoop vanilla protein powder

1 tsp cinnamon

1/2 tsp vanilla

Place the ingredients in a blender on high-speed until all is well combined. This should be some what of a thinner consistency but still thick enough to not be soup.

 

Garnish with a few shavings of coconut oil and start bathing in – uh I mean – enjoy the tastes on your tongue of cakey goodness for your morning meal.
