On Saturday, I gave the first of several lectures at Heaven on Earth Fare . This one was a healthy cooking class for kids. I made baked doughnuts ahead of time (recipe was a variation of several different ones that I stumbled across) and then had the kids decorate them.
I was a little nervous beforehand but mostly excited. The kids were all super sweet…even though one of them dumped half a cup of sugar on the floor and another tried to lick everyone’s utensils… They even asked me when I’d be coming back to hold my next lecture. Success!
Oh and two of the 4th grade girls who attended informed me that they are future pop stars. Unfortunately, I was denied when I asked to be a background singer. They didn’t even let me audition! I was a little crushed, but within time, I’ll get over it.
Saturday night was date night with the hubby. We had a gift card to Sullivan’s , one of my favorite restaurants in Charlotte (our wedding rehearsal dinner was even held there). We decided to celebrate my successful Earth Fare lecture by using up that gift card.
I was really excited because we were seated in the library area of the restaurant. It is more private and intimate than the rest of the dining area, but the whole restaurant has great ambiance in general.
Their marinated mushroom caps are my all-time favorite side dish. In fact, I conveniently forget the fact that I am lactose intolerant when I eat there (they are made with butter). I feel like they are totally worth it!
Today it is pretty darn cold out there, and the weather channel is even calling for snow tonight. You’d think that I would be in the mood for something warm to eat, but I decided to go a different route. A tropical route.
I made a Grass Skirt smoothie! Yes, this is where I got the idea for the title of this blog.
The name came from my husband’s big ol’ brain, actually.
One day, I made one of these concoctions and was going on and on about how much it tasted like a pina colada. Out of curiosity, he took a sip and said that it was really yummy (though he didn’t use the word yummy) and agreed that it tasted like a tropical drink. Then he declared, “You should call this the Grass Skirt.” My husband is a creative genius.
I loved the name not only for its accuracy but also because I have a strong affection for Hawaii, as we went to Maui for our honeymoon in April.
Here is what goes into my beloved Grass Skirt smoothie…
The Grass Skirt Smoothie
2-3 ice cubes
2 cups spinach or kale (I prefer kale)
1/2 cup unsweetened vanilla almond milk
1/2 medium banana
1/2 scoop vanilla whey protein powder (optional)
1/2 tsp imitation coconut (or 1 tsp coconut butter)
1/4 cup pineapple (I also like to add a few tablespoons of the juice)
Dash of cinnamon (optional)
Stevia (optional but I always add it)
Put all ingredients in a blender and blend until smooth. Hula down!
I’ve also added 1/4 cup frozen mango (from Trader Joe’s ) to this smoothie for a little something different.
So now you are clued in as to why I named this blog The Grass Skirt. If you make one or have any fun variations, I’d love to hear about them!
