#27. I don’t like bacon, I just like to call it really late at night and hang up

2 weeks have gone by since my vegetarian adventure begun. I’m down 5.5lbs, I feel great, energetic and…HUNGRY. I’m hungry all the time. I have had friends and family leave me texts, voicemails, and messages on social networking sites…poking fun, teasing me (all in good spirits), about my new found vegetarianism. My hair hasn’t fallen out, my teeth are all still there…and I’ve had more energy than I ‘ve had in a long time.
I’m super in love with Morning Star products, my favorite so far is the Chik’n Tenders! I swear, they taste almost exactly the same!
Chik’n Tenders with cauliflower mash (a pinch of garlic salt & tsp of margarine) and some Stubbs BBQ sauce for dippage…mm mm mmmm. SO good.
But I don’t think the issue to the healthier me is cutting out meat alone. A lot of it has to do with my changed eating habits. Since I’m active, I know I have to get my protein. Stay hydrated, sleep well, walk more, making better choices. Change begets change. Beans are the focal point of my protein (as well as kashi protein bars). I eat at least some sort of bean every day. Chickpeas, lima, kidney etc. So while I make a smart choice for lunch, means I’ll probably make a smart choice for dinner. And thinking about what nutrients my body needs, rather than just satisfying the hunger…HUGE change. “I need protein since I dont eat meat. Beans have protein… I’ll definitely eat those” . It takes a whole change of mind to get on the healthy track. And since I’ve had a hard time staying focused, something about ‘being a vegetarian’ just makes being healthier easier for me. “Oh yea, thats right…I’m a vegetarian. I should probably eat some vegetables.” And veggies substitutes the pastas and breads I would’ve devoured in the past.
Down almost 6lbs, and I’ll I’ve done is just eat more veggies. My exercise is about the same, nothing more nothing less. That all changes tomorrow when I start kickboxing again! Woohoo!
One of my favorite things to eat now…is something I concocted when I couldn’t think of anything else.. I call it my Veggie ‘Splosion Wrap
1 whole wheat tortilla
1/4 bag of microwaveable rice with brocolli & carrots
1/2 cup of Chickpeas
A few small thin slices of Gouda
1 tbsp of pico de gallo
1/4 sliced avocado
1 tsp of ranch dressing
