One of my favorite restaurants is Dali in Somerville. A spanish tapas place that makes an amazing goat cheese, honey and onion dish that is to DIE for!
I am always a big fan of pita pizzas, they’re quick, easy, low-cal and delicious. You can add anything to them and it still really good!
It’s just 6 ingredients, almost all things you can find in the back of your fridge or veggie drawer. Well, ‘cept maybe goat cheese, who has that on hand?
Here’s what you need:
1/4 Green pepper, chopped
1/4 red onion, chopped (any onion will do, but I love red ones!)
1/4 cup mushrooms, chopped
1/4 cup goat cheese crumble
1 tbsp of honey
2 Whole wheat pita
(Recipe makes 2 pizzas. I like to make dinner for 2 servings, so I can pack it for lunch the next day. Saves money, time and I don’t have to run around trying to think of a healthy lunch to pack in the morning!)
I didn’t add any pizza sauce or anything, I felt it would take away from the honey. Once all the veggies and cheese is on, just drizzle the honey over the pizzas, set the oven at 375 for about 12-15 minutes and you’re all done!
Goat cheese, uncooked, is an aquired taste. I personally love it. But once goat cheese is cooked, its soft, not as bitter, very mushy and less gooey than other cheeses. Combine that with the sweetness of the honey, tre’ magnifique!!!
