25 Days of Christmas – Day 15: Christmas Granola

I came home pretty late this evening to find this waiting for me at the table!

I also received My Foodie Pen Pal package, and I can’t wait to dig in.

First, by twitter request, I have to share a festive recipe that I made part of the box I sent to my pen pal. I polled twitter about what recipe to share; dinner, potluck, or Christmas granola. And the winner…

Christmas Quinoa Granola

Inspired by Hungry Hungry Hippie

Making my own granola is something I’ve wanted to do for a while. I love granola but it can get high in fat and sugar fast. I never realized how easy it is to make your own – you just mix, bake, and done. And you have more control over what goes in it. This granola is made with red quinoa, dried cherries, and pistachios to give it some fun red and green color. It also made my kitchen smell lovely with the spiced scents of cinnamon, ginger, cardamom, and orange peel. If that does not sound like a cozy Christmas morning in pajamas, then I don’t know what does.

Ingredients:

  • 2 cups whole rolled oats
  • 1 cup red quinoa
  • 2 tablespoon chia seeds (optional)
  • 1/4-1/3 cup chopped raw unsalted pistachios
  • 1/4-1/3 cup sliced raw almonds
  • 2 tsp cinnamon
  • .5-1 tsp cardamom
  • ,5-1 tsp ginger
  • 1/4 cup shredded unsweetened coconut
  • zest from one orange (or maybe even dried orange peel chopped)
  • 1/3 cup dried unsweetened cherries chopped (or cranberries)
  • 1/4 cup lite maple syrup (if you want sweeter you might have to add more)
  • 1/3 cup apple sauce (or orange juice might be nice)
  • 1 tsp of vanilla

Directions:

  1. Preheat oven to 300 degrees. Mix all dry ingredients except for the cherries.
  2. Add wet ingredients and mix until everything is moist
  3. Spread out on sprayed baking sheet and bake for 30 minutes making sure to stir it about every 10 min or so.
  4. Remove from over add cherries, mix, and bake for another 5-8 minutes
  5. Enjoy! You can store it in a ball jar or ziplock bag, or other air tight container. This recipe will fill about 2 pint size ball jars.
