10km Training & Flourless Zucchini Brownies

Sorry for my lack of blogging, believe me when I say it is not due to lack of interest... I have just been insanely busy (as I mentioned in my last post!). I kept busy this weekend playing in a baseball tournament.... we had a heartbreak loss in the semi finals, dinner party Friday night with 5 amazing couples and The Sheepdogs concert last night, needless to say they were amazing!

I have also been working on training for a 10km race, I think I mentioned before that I will be running this race with my fellow Sweat Pink Ambassador Sarah! I have been easing into training for this race because I am trying to avoid re-aggravating my hip flexor injury from last year. So far so good aside from some groin irritation, I made sure to see my chiropractor right away! Because my hips are way more flexible that the average persons, the muscles in that area always have to work over time to stabilize my hips when I run, therefore I will always be prone to pain and injury in that area which SUCKS! This will actually be the third 10km race that I have done since I injured my hip last summer, and I am hoping it will be the first pain free 10km.

My plan for this race is to do 10's and 1's and to run at a nice steady pace and not push "too" hard to avoid irritating my hip. For me this race is not about time or getting a new PB, it is about finishing 10km and not being in pain. The furthest training run I have done for this race has been 8km, that is the run that aggravated my groin. I have decided that if I am in pain after this race then I will have to suck it up and stick to doing 5km races, which really isn't all that bad right? I figure I can work on a new PB (personal best) this winter!

On another note I tried out a new recipe this past week for Flourless Zucchini Brownies and was absolutely thrilled with how it turned out! I found this recipe on the Delighted Momma blog (check out her page, she has tons of other amazing recipes! I can't wait to try more of them out). Here is a look at how mine turned out!

Delighted Momma's Flourless Zucchini Brownies

This recipe is super easy, and they taste absolutely decadent!

Ingredients:
  • 1 cup of almond butter.
  • 1 1/2 cup of grated or chopped zucchini.(I used the small sized of my cheese grater to get the zucchini really fine)
  • 1/3 cup of raw honey
  • 1 egg
  • 1 tsp of vanilla
  • 1 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg (I am not a big fan of nutmeg, so I did not include this)
  • 1 cup of dark chocolate chips. I used gluten free chocolate chips. 
all of the ingredients are ready to go!


All Mixed up and ready to go!

 Directions:
  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients into a large bowl and mix everything together.
  3. Pour into a greased 9x9 baking pan.
  4. Bake for 35-45 minutes, or until a toothpick comes out clean. (mine took the full 45 min)




My Delicious Brownies are made!
 These brownies are amazing and are considered paleo! Just make sure you find chocolate chips that are gluten free... I have also decided they are "healthy" for me since there is a cup and a half of zucchini in them! hehe
