I hope everyone is having a fabulous start to the new year!  Mine has started wonderfully by spending time with my family eating a fab meal and watching movies all day.  It all started yesterday with some major food preparations such as par boiling vegetables and cooking the ham before so it could be roasted today.  I started my day with a yummy whole meal wrap filled with sunflower seed butter and chopped banana and apple…

This was super filling and set me up for my hunt in town for last minute ingredients and some gold charger plates to go on my table setting.  I was in town for hours going from shop to shop looking for these charger plates.  My perseverance paid off as I found some that were perfect on my dining table.  Be warned they feature quite a lot in this post.  After my mission in town I was starving so I made a quick lunch made from a baked sweet potato topped with tuna and vegetables in a tomato sauce.  I also snacked on some oranges and an apple too…

As soon as lunch was over I hit the kitchen to start my food prep for today.  Peeling, boiling and baking ensued.  I made this fabulously rich chocolate brownie cake that I adapted from a Nigella recipe that I found in the Nigella Kitchen cookbook that I got for Christmas…

This brownie cake is dense and full of chocolately goodness.  I will share the recipe another time.  After cooking for what seemed liked hours I thought I would fit in a short 3 mile run and some ab exercises, which really helped to wash away all the stresses of the food prep.  For dinner I made a refreshing almond and chocolate green smoothie topped with some chocolate chip cookies…

I mixed spinach, a pear, ground almonds, chocolate soya milk, mixed berries, pea protein, xanthan gum and macca powder.  Who would have thought that spinach and cookies could be used in the same dish?!?!? Well listen up it can.  And it was good!

This morning I woke up bright and early to make my second dessert of Lemon Meringue Pie and started my day with another green smoothie.  This time I mixed spinach, apple, soya milk and pea protein.  I drank it straight up from a glass.

It was time to feast…

And it was quite a feast! Honey roast ham, spiced apple and ginger chutney, sage and onion stuffing, roasted carrots and parsnips, brussel sprouts and super crunchy potatoes.  It was all delicious and a complete blow out, but a great way to see in the new year! 

We also had dessert.  Lots of dessert…

There was seven of us eating and boy did we eat, especially when it came to dessert.  I had a slice of the Lemon Meringue and a slither of the Chocolate Brownie Cake…yum yum!  The rest of the day was spent watching movies and letting all the food go down, but it was all worth it.  Every last mouthful!

To kick off the new year I’m now ready for a lighter and cleaner eating plan to rid my body of all of those nasty’s.  Later this afternoon I tried out Dr Stuart’s Detox tea that I picked up the other day and for dinner I didn’t really want to or need to eat but I was dying for another green smoothie.  I mixed spinach, frozen berries, banana, pea protein and soya milk.  Keeping it simple and straight from the glass!

I think these are going to be a regular feature in my diet over the next few weeks.  At least two a day!

As Benjamin Franklin said: “…and let every new year find you a better man. “  I’ve set myself some goals for 2011 to help find a better me.

  • carry on with my healthy eating and exercise
  • incorporate a variety of exercises in to my weekly workout regime.  I have joined the gym now and I am looking forward to taking advantage of all of the classes such as yoga, spinning, body pump and maybe a little aerobics.  Who knows?!? But I am willing to give them all a try.
  • I really want to run a marathon this year, whether it be a 1K run or a 10K run.  I’m signing up and cannot wait for the challenge!
  • I want to blog more quality over quantity.  Sometimes I feel pressured to blog every day or every other day even if nothing exciting has happened.  I really don’t want to bore you.
  • my photography skills are not great…lets be honest!  I would love to be able to take pics that are not dark and full of shadows.  I have already put in a request for a new camera for my birthday in March.  Here’s hoping! ;D
  • Throw everything I have in to my studies.  I have fallen into a bit of a lazy rut of late, but I am really going to apply myself when I go back next week.
  • Plan and organise!  Since I will be spending more time in the lab I need to be more organised and actually plan my days and food so I can fit everything in.  Even if it means writing everything down.
