Okay, so I have been working very hard on reading labels, paying attention to what I am eating, and researching gluten-free diets/products. I live in a smaller area and there are not a lot of resources (from what I have found). I did find an organic health food store (the only one in town) that carries gluten-free products. So, doing my best to be open minded I purchased a few items to try.....corn spaghetti , pancake mix, and chocolate cake mix.

This morning I decided to make pancakes. The mix was easy, which I was happy about. I even added some fruit. Thing is it was not good....not good at all! I took a few bites and that was all I could stand to eat. It was so gross. I am not sure if it is that I just need to get used to it or if I didn't like it because it was different, but the thing is I did not like it. Needless to say I won't be making pancakes again. Is there such a thing as gluten-free foods that taste like the real thing? Because the pancakes tasted nothing like real pancakes. This is going to be harder than I thought. Tomorrow night we are doing the speghetti....I'll let you know how it goes.

In the meantime, if you have recommendations on products that are gluten-free and taste like the real thing....I am all ears! Until next time......
