Our tomatoes are literally falling off the vine! We can’t keep up, can’t eat them or jar them fast enough. While my husband and I like to eat them raw, and my sister-in-law sprinkles salt on them and eats them like an apple….there are only a few ways my kids will eat tomatoes.
As spaghetti sauce
As tomato soup (for dipping their grilled cheese sandwiches in.)
Cut up as salsa or in bean dip.
Combined with HFCS and called Ketchup! lol
My husband has been eating them chopped up on top of his scrambled eggs every day. It is REALLY tasty! There are lot’s of vegetables he and I would eat on top of scrambled eggs.
Tomato 101:
(From my favorite book The World’s Healthiest Foods ). Botanically, tomatoes are a fruit. Culinarily, tomatoes are a vegetable. They are most famous for their lycopene which gives tomatoes their great red color and has been shown to protect cells from oxidation and damage. Tomatoes are also a great source of vitamin C and A.
Do your kids like tomatoes? what do you do with them?
