Cauliflower is one of those somewhat forgettable vegetables. Or at least, I tend to forget about it. Is it so blah in my mind because it’s white? Because it has sort of a neutral taste? It’s not that I don’t like cauliflower, I just don’t remember that I like it very often.
But because cauliflower has a relatively neutral taste and texture, it’s actually one of the more versatile vegetables out there. And even though we’ve been taught that white things are totally void of nutrients, cauliflower is a major exception to the rule. Check out the stats (from WHFoods.com ):
