Yogurt Carob Apple Almond Parfait

Organic Greek yogurt has a creamy luxurious texture and rich flavor that makes you believe you are eating something totally decadent. I like enjoying this yogurt plain and in all kinds of different recipes.

Greek yogurt makes a great substitute for mayonnaise and sour cream in salads, salad dressing, dips, and as a base for sauces to infuse these dishes with great tangy flavor and creamy texture. I also like to add a spoonful into soups where its great flavor adds just the right note to take my soups to the next level.

Greek yogurt is regular yogurt that has the whey (liquid) strained off. This straining process gives the yogurt more body, less lactose, lower carbohydrates, and higher protein content than regular yogurt.

This easy yogurt carob parfait tastes like a creamy caramel-chocolate pudding. Carob, vanilla, maple syrup, and cinnamon are blended with the yogurt until smooth. This luscious carob goodness is layered with crisp apple cubes and crunchy slivers of raw almonds for a delightful parfait that will fill your body with healing probiotics, protein, healthy fats, phytonutrients, vitamins, minerals, antioxidants, and fiber. All of these fantastic nutrients will help provide you with strength, energy, and immunity.

If you are not familiar with carob I would like to introduce you to its wonderful sweet caramel-chocolate taste and good health benefits. Once you try it you will find all kinds of recipes to add it to.

Carob comes from the fruit pod of an evergreen tree. The brown pods from this tree are filled with a sweet brown pulp that can be dried, roasted, and ground into a powder that can be used as a substitute for cacao (cocoa) powder. Carob powder comes in both raw and roasted versions. Foods Alive has a raw version and Chatfields’s does a roasted version. I have used both and they have great flavor.

Carob is a great source of calcium, magnesium, potassium, copper, protein, vitamin A, B vitamins, and fiber. Carob doesn’t contain theobromine like chocolate so it is stimulant-free.

Apples contain a vast array of antioxidants, polyphenols, and phytonutrients including quercetin, myricetin, and kaempferol, which help protect the body against cancer, fat oxidation, and inflammation. Purchase organic apples to avoid pesticides and waxes that are used on conventionally grown apples.

Raw almonds add additional antioxidants, potassium, vitamin E, and magnesium along with healthy monounsaturated fats that help lower bad cholesterol.

If you don’t eat dairy and would like to make a vegan version of this recipe you can substitute coconut milk yogurt.

 Yogurt Carob Apple Almond Parfait

Serves 2

1 large organic red apple

2 teaspoons of fresh orange or lemon juice

1 cup organic plain Greek yogurt (I used Stonyfield Organic Oikos brand)

3 tablespoons carob powder

3 tablespoons organic maple syrup or 1-2 packets of stevia

¼ teaspoon cinnamon

1 teaspoon pure vanilla extract

½ cup thinly sliced raw almonds


Rinse apple, pat dry, cut into small cubes, and toss with fresh orange or lemon juice to prevent browning. Set apples aside while you make the carob yogurt.  Place yogurt, carob powder, maple syrup or stevia, cinnamon, and vanilla in a blender or small bowl and blend until well combined and smooth. Place half of the apples in the bottom of two parfait or wide mouth glasses and top with half the yogurt and almonds. Repeat the process until you almost reach the very top of each glass. Finish topping each parfait with the rest of the almonds and enjoy immediately.
