Yogi Eats and Eats

Whew! I am officially a yogi! I passed my yoga exam yesterday and it is PARTY time today. The exam was tough but I knew more than I thought and am so happy that I chose to do this teacher training. To be honest, this is really just the beginning, I have completed the teacher training but now this opens the doors for so many things that I feel relief to reclaim my weekends with my family but am energized by all the possibilities I have moving forward.

I was all excited to sleep in this morning but awoke at 5:30am am and just could not get back to sleep. I definitely have a bit of nervous energy going on....and I love having a few moments of quiet time to myself. I drank a cup of warm lemon water first and then made a wonderful pot of French Press Coffee that I am enjoying now.

I am going to recap yesterday's eats, for they were loaded with all my favorites. I was a little nervous yesterday morning and woke up hungry! The scale stayed steady so that was a nice bonus, I am definitely in my happier zone and would like to scale back just a bit more to make this stick.

I started the day with a bowl of comfort. I absolutely adore my Vanilla Date Oats... it is the best and I even splurged and had 3 dates on it yesterday (that was the end of the bag... will have to pick up more)

Vanilla Date Oats

1/2 cup of rolled oats
1/2 Silk Vanilla Soy Milk with Added Fiber
1/2 cup of water
1 tsp Cinnamon

Cook for 4-5 minutes over medium heat. Remove from heat and top with:

1 tablespoon of ground flaxseed
1 tablespoon of wheat germ
3 chewy dates, diced
6 Blue Diamond Oven Roasted Cinnamon Brown Sugar Almonds, chopped

This was so good.... and wish I had dates so I could make a bowl this morning! Love, Love, love Vanilla Date Oats.

Before heading out for the big exam, I made myself my 2nd Favorite Meal- Peanut Butter and Banana on an Ezekiel English Muffin. Brain Power food.



Peanut Butter and Banana on Ezekiel English Muffin

1 tablespoon Naturally More Peanut Butter
1 small banana sliced
1 Food For Life Ezekiel 7-Sprouted Grain English Muffin

After my exam, I met my family at the Butler Pitch and Putt downtown. My husband came home with the major golf bug! The Butler Pitch and Putt is a far cry from Pinehurst, but it is a fun place to take the kids to. I laughed, Steve went on and on about his trip to Pinehurst yesterday morning. He had one of those golfer moments when he was coming down the fairway on course #2 and he heard the church bells ringing, the azaleas were in full bloom and he made an eagle on the hole. I am so glad he had a great time! He has been investing in me the last couple of years, letting me figure out "what I want to do when I grow up" (my previous work history was in corporate marketing) so I want him to take some time for himself! Be it working on his novel ( he is a writer and gets up every morning and writes), playing golf or getting involved in whatever current passion he has at the moment (he is a political junkie!)

So after the Pitch and Putt.... we headed to Whole Foods, I never tire of that place and made myself a wonderful salad loaded with raw beets, zucchini, broccoli, cauliflower, cranberry quinoa salad, edamame, feta cheese and pepitas. Basically I got the works and enjoyed everybite of it! I was famished when we got there.. it had been a long day.





I of course, saved room for dessert. I had two bites of Steve's decandant Cinnamon Roll Bread Pudding! This stuff is amazing and oh so good!



I got one of my all time favorite desserts- Mini Fruit Tart! I love these so much and usually get one of these for my birthday every year. I also love to make Fruit Tarts... they are one of my specialties and am surprised that I have not made one since blogging.... note to self- need to make Fruit Tart soon. I have a great lower cal crust and custard recipe that I love and makes for a nice guilt free dessert!



So that was my day yesterday... oh and yes... stopped at Anthropologie to exchange one last thing.. ended up just getting some fun jewelry which I know I will enjoy... the tight cigarette jeans are just not me....my husband said he liked them but did not see me wearing them and that is what is comes down to... I don't feel comfortable wearing the skin tight jeans. Ahh... circling!

Today we are going to have a graduation party and potluck! It should be a fun day- we are going to do a practice together, a meditation and then some sort of secret ceremony. At 4:00pm, family and friends are invited to join us for a potluck! I am going to make one of my favorite Oatmeal Dark Chocolate Chunk Cookies to bring... will be sharing the recipe soon! Now.. what to have for breakfast.. hmm..
