If it is not clear yet, I LOVE ECLIPSE CHOCOLAT. It is the best place everrrrrrrrrrrr!! So they call these babies three ways. Three flights, one wine, cheese and truffle in each. This was absolutely amazing if I do say so myself. So much fun, and very very interesting taste combinations. Allow me to take you on the journey and make your mouth water!

Flight 1
Truffle: Lemon Ginger. 31% White Chocolate shell, white chocolate ganache

Cheese: Delice Pommard. France, cow milk, rolled in mustard husks

Wine: Mondavi Moscato. White muscat, elegantly sweet, Napa.

Comments on the first tasting combo: the bitterness of the mustard in the cheese totally made the lemon POP in the truffle. The sweetness of the truffle really dulled the sweetness of the wine and mellowed out the cheese. My god, I totally want this cheese. It was the absolute perfect cheese. Gotta get me to Vinnie's to get some!
Flight 2
Truffle: Lavendar Sea-Salt Caramel. 38% milk shell, caramel-chocolate ganache.

Cheese: Gjetost. Netherlands, goat milk, caramelized whey

Here is Will, the most amazing chocolatier ever, pouring our wine.

Wine: Yalumba. Red "old vine" blend, tawny port, Australia

A very pensive BF.

Comments on the second flight. This was my least favorite of all the flights, but it was still awesome. The cheese was a strange texture for me, but it was still quite tasty. The wine was freaking STRONG. There is a reason they poured a lot less than the first glass... The lavender sea-salt on the truffle really brought the cheese down a notch. It was bomb!
Flight 3
Truffle: Balsamic Pink Peppercorn. 61% shell, dark chocolate ganache

Cheese: Roaring Forties Blue. Australia, cow milk, matured in wax

Wine: Bogle. Red petit sirah, subtle port, Clarksburg, CA

Here I am digging into my DARKKKK chocolate truffle.

Comments on the third flight. This was my second favorite. I absolutely loved the truffle. The blue cheese was very strong and blue cheese-y. It really made the peppercorns in the truffle stand out. Tasting the truffle without a bite of the cheese resulted in a much less peppercorny flavor.
This was incredibly fun, and I'm definitely going back. I love Eclipse and higly recommend this event. Next month he is doing one with beer. I'm SO THERE.
