Will Rising Food Prices Cause People to Eat Healthier?

Will people eat better foods if the prices for junk food go up? Michael Pollan, author of bestsellers The Omnivore's Dilemma  and In Defense of Food, hopes so, according to Kim Severson of The New York Times.

As grain and fossil fuel prices go up, ingredients that depend on them like high fructose corn syrup will get more costly too, Severenson points out. So things like soda will probably get pricier, making fewer people decide to buy them.

The theory goes that consumers would then turn more often to locally grown fruits and vegetables, which Severson says haven't gotten more expensive.
