Oh hey there! Happy What I Ate Wednesday to you too
So we just survived another winter storm! Actually, we were supposed to get 10 inches but only ended up getting about 2 or 3. And I’m pretty sure it’s going to melt on Friday- fingers crossed! Herky has been loving the daily walks. Spring is so close I can almost taste it!
So let’s see how my whole foods challenge is going so far, shall we? On Monday the hubs and I got up nice and early for a gym session in the weight room. Before we left I had a big glass of water and ate a date with some almond butter (X2).
I lifted arms for my workout and they were deliciously sore the next day. My pre-workout snack gave me a lot of energy to power through those weights. I seriously love morning workouts so much. I always have way more energy throughout the day, I feel awesome and I only have to shower/get ready once.
Afterwards I refueled with leftovers from the night before of a salmon cake crumbled onto a romaine leaf with some homemade tomatillo sauce + a small spinach/banana/almond milk smoothie. It was the perfect blend of savory and sweet.
After a mid-morning snack of a couple dips to the almond butter jar (I was right in stocking up at Trader Joe’s ), I had an easy salad with eggs, sweet potato and avocados. The eggs have to be runny when I make this because it stands in as my “dressing”. New favorite lunch! A couple hours later I was hungry again so I mixed some pulled chicken that I made during Sunday food prep with avocado and ate it with more tomatillo sauce in romaine leaves.
Because I love cooking so much and cook for us pretty much every night of the week, the hubs has been making it a point to be the one to cook a meal for us at least once a week so that he doesn’t forget how to cook/can keep up with his skills- and I love the idea! He offered to cook on Monday and since I had meal planned and prepped on Sunday to make some sort of meal I and told him he could be as creative as he wanted with the chosen ingredients (red potatoes, red pepper, poblano peppers, chicken sausage and avocado). I loved that he came up with a skillet topped with the avocado….he clearly knows skillets with avocado are the way to my heart <3
I followed dinner with a couple bites of dark chocolate and my nightly tea (my fave flavor has been black cherry as of late). Overall it was a pretty good day of eats! We are starting to get the hang of this way of eating and it’s getting easier and easier everyday (a little time spent preparing my food on Sunday goes a long way). Plus it’s helped me rediscover my love for whole dates! Covered with TJs almond butter, of course
