Each Wednesday I share everything I ate for the day and explain the strategies for what I ate and why I ate it with you! I hope to inspire you to try new things and to eat healthy. I started the morning off with one of my current favorite breakfasts- oatmeal pancakes and grapes.
The pancakes are the easiest recipe you ever find: 1/2 cup old fashioned oats, 1 egg (or 2 egg whites) and a pinch of cinnamon. That’s it! Cook over medium low and top with your choice of fruit and a spoonful of nut butter. Lately I am rolling with sunbutter, I love how drippy and smooth the texture is! Black coffee is a staple in my morning regimen. I had some leftover french pressed coffee from yesterday morning so today I drank it over ice.
A few hours later I grabbed my lighter lunch over my break at the office.
I made a salad with leftover roasted veggies from last night’s dinner, threw in a few handfuls of walnuts for a little protein and some goat cheese crumbles to top it off over a bed of local lettuce. Throughout the workday I drink A LOT of water. Because I drink so much H20, I love having my nalgene water bottle with me at allll times. Throw a few slices of lemons in it and it just adds a little somethin’ somethin’ to it. I just leave the lemons when I refill the bottle with more water.
I don’t know if it was the broken air conditioner, the humid weather or whatttt but 2 hours after lunch I deemed it a 2nd coffee type of day But that’s okay because the Luna Bar in vanilla almond almost needs a coffee to pair with. I think my past job as a starbucks barista is still living in me with the coffee pairing….
After work snack plate: sharp cheddar, wheat thins and more grapes. And yes, I ate it on a pumpkin plate.
Dinner had to be fast and furious for 1 (since Michael is working late), so I pan seared some fish I had pulled out of the freezer this morning to defrost and made it into a fish-taco…thing…kind of? I tossed some cajun seasoning, salt/pepper on the fish and served it with a whole wheat tortilla with some lettuce and pickled jalapenos and a little lime squeeze. I heated the rest of the roasted veggies and dinner was served in about 10 minutes flat!
And that’s my day full of eats. I’m probably going to dig through the kitchen for a late night snack as soon as I publish this post. I typically eat a piece of dark chocolate and a cup of tea or a bowl of cereal. And if I’m feeling frisky I’ll fry up an egg with a piece of toast.
