Wheat berries are just regular whole kernals of wheat you would purchase to grind into flour. Boiled for an hour, these berries transform into chewy little nuts that can be sprinkled over salads, oatmeal, or eaten as a dish themselves. Crystal atEveryday Food Storage, posted the yummiest looking and sounding salad the other day. I couldn’t wait to get a minute to try it. Crystals blog is fabulous because she takes things you would have in your food storage, and creates great recipes with it. Her recipes are usually healthy, new, and fabulous.
Her Wheat Berry Salad was no exception. Clickhere for the recipe. I could eat it for breakfast, lunch, and dinner. It had that perfect sweetness that I love in a salad. A great chewiness that comes from the boiled wheat berries. My husband even commented it tasted a little like apple pie filling. And the best part, it is totally filling! After a bowl of it, I really didn’t need to eat anything else.
The kids on the other hand were too stubborn to try it. They didn’t like the way it looked, but I told them, “your loss, more for me!” I think they’ll change their minds because I plan to make it often. The husband liked it, and once again, I loved it!
