What I Ate Wednesday

I am going to go ahead and declare today the day of the bottomless pit (aka-my stomach)!

Luckily, it’s What I Ate Wednesday so you all get to see everything that has passed through my lips (so far- there will be more before I hit the sack tonight!).

This is the first one WIAW I’m participating in this month and may or may not have missed the memo on focusing on veggies for wednesdays.  Let’s see what I managed to shovel in my face eat for today.

Breakfast  8:00 am IMG_1955

Surprised?! Hot oats will always have my <3  This bowl had 1/3 cup old fashioned oats, 1 ripe banana, 1/3 cup almond milk, 1/3 cup water and topped with strawberry jam, sunbutter and cinnamon clusters for some crunch.

I decided to live on the wild side and buy  my first jar of sunbutter instead of the usual almond butter.  The verdict?  Obsessed!  I love how drippy/runny it is. Perfect for a melty scoop right on top of my oats and over a banana for a snack.  Love!

Leftovers FTW! The last of the tomato soup I made over the weekend (which was like a quarter cup?) topped with bread cubes.  Leftover pasta from last night- whole wheat spaghetti with spinach, carrots and gorgonzola sauce.  Who doesn’t like pasta in the middle of the day?

Followed by a cup of tea with 1 mint bag and 2 green tea bags and a piece of dark chocolate with espresso beans

See the little bean?  This chocolate bar doesn’t stand a chance with those bits of caffeine teasing me ;)

Snack 4:00 pm IMG_1963

It’s not a day in my life without eggs in some shape or form.  2 egg whites 1 egg and 2 corn tortillas with lotttssss of spicy salsa. Plus another tea.  It was cold and rainy here today so I needed to be warmed from the inside out ya know?

I purchased a new to me salsa (same time as I bought the sunbutter- must have been feelin’ fiesty at the grocery store!) and used it on the eggs.  It’s not quite as spicy as I thought it would be but I am loving the flavor.  Garlic is my jam! IMG_1964

Dinner 7:30

I was searching for a chicken and mushroom recipe the other day and stumbled across this one.  I subbed the white wine for chicken stock and splash of lemon juice and used a little less butter overall ;)  Annnnnd obviously had to through in some greens.  I have been waiting and thinking about this for days (seriously) and finallyyy got to make it tonight.  HEAVEN!  Heaven.  So simple yet so flavorful.  This was devoured in about 5 seconds flat.

And now I’m going to hit publish on this post so that I can go rummage around the fridge for more food.  What is with my stomach today?!  Hopefully it’s my muscles asking for more food since I have been hammering them latley.  I’m going to take it as a sign for more fuel ;)

I’m thinking some concoction of yogurt, protein powder and chocolate chips (+ tea of course)  is in the order while I finish watching this episode of American Idol.
