I’m living on the wild side and posting what I ate throughout Tuesday. I know, I’m such a rebel.
Overnight oats: 1/2 cup old fashioned oats, 1/4 cup plain yogurt, 1/4 cup water, 1 T chia seeds, 1/2 scoop brown rice protein powder, pinch of salt/vanilla and topped with frozen berries. In the morning I topped it off with a scoop of almond butter and raspberry jam.
Plus the usual hot lemon water and black coffee. I love the gel-like texture that the chia seeds make it. I read a tweet the other day that blueberries are actually purple. I never really thought about it but blueberries are totally purple. Mind blown?!
1:30 pm Breakfast kept me full for 4.5 hours! It’s a good breakfast if it can do that in my book. For lunch I ate some leftover roasted veggies (turnips, onions, carrots) and sprinkled a couple caramelized walnuts on top, with a ww piece of toast a smear of hummus + a fried egg and teeny bit of cheese melted on top…..with crushed red peppers. Always crushed red. And half a grapefruit.
My beloved apple cider tea for a little “snack”. I threw a green tea bag in there for a little caffeine boost, but it was a mistake. I thought it might taste like a green apple? Definitely didn’t. I still drank it, though
Chicken and grilled pineapple fried brown rice. Um, yeah. Incredible. I loosely based this recipe off of The Pioneer Woman (she is a damn good cook, might I add- perhaps why she has her own foodnetwork show? yup!). I used 1 chopped chicken breast instead of the pork chops, subbed brown rice for white and added more veggies (carrots, green peppers, more onions). The grilled pineapple was key for this recipe, though! And it took me a total of 30 minutes from start to finish to make this. Triple win!
THIS will be in my regular nighttime rotation! Actually I will probably eat this every. single. night for snack until I get sick of it….. or I run out of whole wheat honey chocolate chip banana bread I tend to get hooked on a meal and eat it over and over and over again… I can’t be the only one who does this?
This has 1/3 cup nonfat yogurt +1 tsp protein powder, 1 tsp cocoa powder, 1/2 tsp honey mixed together and then topped with a crumbled piece of ww chocolate banana bread. Heavennnnnnnn. It had just enough chocolate in it to squash the cravings with the added bonus of protein and very little sugar. I’ve said it before and I’ll say it again: yogurt works miracles.
