Hello my fellow bloggies I had every intention of writing this post before work this morning, but my body decided that wasn’t happenin‘, and I woke up with a lovely headache/congestion/chills. I have only been sick maybe once the past 12 months and felt like this one came out of nowhere? I tried to play it off and drank a big glass of lemon water and made my way to work….only to come back home a few hours later. Whomp Whomp. Vitamin C packets to the rescue? We’ll see if that plus gallons of water is the magic combo
At any rate, it’s still my favorite (work) day of the week so let’s celebrating by gawking at each other’s food, shall we? As always, head over to Jenn’s blog if you want to see other blog posts for What I Ate Wednesday.
I started my Wednesday Tuesday with a big ol’ bowl of fluffy peach oatmeal (peach season has stolen my heart <3 I love how perfectly juicy those puppies are). I wasn’t necessarily craving it, but I couldn’t make my recent obsession of avocado toast with fried eggs because we were out of toast and eggs. Actually, now that I think about it- it’s an addiction. I even made the hubby stop and pick up all 3 essentials (whole wheat bread, ripe avocado and eggs) today because I haven’t had it in like 3 days. #sorrynotsorry. But as the days start to get a little cooler, I will probably start to crave my first breakfast love of hot oatmeal a little more.
I grabbed some leftovers from the fridge for my lunch- roasted potatoes/broccoli and the last jalapeno cornbread muffin from this weekend. Oh and I added some of the garlic pepper jelly from my Foodie Pen Pal box as the sauce for the broccoli- it was a very good idea Those muffins didn’t stand a chance….as in 12 muffins were gone in 72 hours between me and Michael. Here is the recipe I used for the muffins. I made mine with yogurt and then ended up having to add a splash of milk to the mix since it was a little too dry before baking. I also used about a cup of jalapenos (I know!) and then obviously topped each muffin with a fresh slice- seeds and all. I like to live on the wild side.
And because the muffins weren’t spicy enough (kidding, obvs), I doused my veggies in my favorite garlic hot sauce. It was amazing.
A little while later I had a couple walnuts and dates from this baggie that I keep in my desk with a side of my favorite tea. Post-work I knew I needed a little snack to power my through my favorite boot camp class and opted for a small bowl of plain nonfat yogurt with some peanut butter and chocolate puffins (amazeballs), a drizzle of honey and some chia seeds. It did a good job if fueling me through the grueling class- which included one million lunges, burpees and bear crawls. Yes, one million. Of each.
The husband was finally not traveling for work for the first time in 3 weeks and was able to take the class with me- yay! Working out is a lot more fun with your other half, don’t you agree? I didn’t make it to yoga like I semi-planned , but I took Herky on a mile walk before class instead. After class, I threw some chicken I had marinating on the grill and made us a greek chicken salad. This is definitely my favorite go-to salad these days. So easy and so, so good.
I’ve been making an effort to lift heavy weights a couple of times a week, and can always see an increase in my appetite when I do– I love it because I know it means I’m burning through those calories with my growing muscles, but then I know this means I have to eat more…..because eating nachos before bed is so hard All I did was topped these Garden of Eden blue corn chips with a spoonful of tequila salsa and a little mozzarella cheese. After I broiled them for a couple of minutes I topped it with a little plain nonfat yogurt. Perfect midnight 10:00 pm snack.
For some reason I almost always prefer savory over sweet foods. As if you couldn’t tell in my breakfast and late night snack cravings! #spicylifeproblems
Alright, I’m off to try and kick this cold. I’m going to take today off from the gym (an achy body and pounding head is not a good mix for the weight room), so I am going to get some fresh air and at least take Herky for our usual 1 mile walk around the neighborhood.
