Every week I am involved with an email chain between a few of my friends that I creatively call the Girls Goals Group. On Monday morning we email out several goals that we have for the week and update on the goals we set for the previous week. They are typically small, obtainable goals (more like a To Do list) that can easily be done in the week. It is nice to get those goals written down in public and helps us all keep accountable for achieving those small tasks. One of mine almost every week is to “Bring my lunch to work every day”. I’m proud to say that I have been able to write “DONE!” next to that goal for the past two weeks. It is a record!
I’ve been obsessed with this little divided tupperware container I picked up at Target. I typically divide it up into veggies, protein, and fruit. It helps me keep a nice balance…most of the time. Last week I had leftovers in the divided container that consisted of pulled chicken and two little sections of mac & cheese. Oops!
Here is a look at a few of the combos I have had over the past few weeks.
V: Greens, grape tomatoes, 1/4 c. cottage cheese with TONS of pepper
F: Bananas, Strawberries, and a little hemp hearts
P: Rotisserie baked chicken tenders
V: Greens, Cucumbers, Yellow Peppers
F: Cutie clementines
P: 1 hard boiled egg and 1/2 c. black bean & Salsa mixture
Tricked ya! Not a divided plate at all, but a Chipotle bowl with lettuce, black beans, chicken, mild salsa and corn salsa. I had plans for lunch with a friend that day and she ended up buying. SCORE! That still counts as bringing my lunch every day, right?!
Hope you guys are having a great week! I spent last night with the Girls Goals Group having some dinner, wine and catching up. Tonight I’m out again with a few old co-workers. Good thing I keep bringing lunch to work. I’d be broke by Thursday!
