And just like that, we’re halfway through the week again. Time flies when you’re having fun, right?!

I was craving sweet and savory for breakfast, so I scrambled a couple of eggs and served it with some salsa, half of a ww tortilla, an apple and soynut butter/cinnamon and a zucchini banana muffin. Except I ended up not eating the muffin – I think the extra hot mug of lemon water filled me up a little bit more than usual.
So I brought the muffin along with me to work and managed to eat it for lunch along with a mini veggie pot pie from the night before.
I made some empanadas over the weekend….including my own crust. I know, so Martha Stewart of me, right? I had a teeny about of leftover dough and decided I had just enough to make 2 mini pot pies with it, so I sauteed some veggies with spices and simmered in some chicken broth and walahhhhh!
Those mini pot pies were what dreams are made of, I swear. I wish I could make every single one of you one of these pies- I can’t. stop. thinking. about how good they were! And that crust…oh that crust. Since I made it I know how much butter went into it, which is probably why it was so amazing. All in moderation, right? #dontfearthebutter
So after work I knew that I needed something to eat before bootcamp, but wanted it to be somewhat small/light. So I took the other half of the tortilla from breakfast and threw some deli ham and topped it with jalapeno mustard. It may come as a shock to know that all of my condiments have “spicy” or “jalapeno” before it- jalapeno mustard, spicy garlic hot sauce, spicy pepper jam, etc. ;)
Even though it was 97 degrees out yesterday, I still reluctantly went to class. We had it outside but the instructor was an angel and had us do a lot of resistance band exercises instead of the usual burpees, squat jumps and hill sprints to avoid everyone passing out from a heat stroke. It was still a good workout- I like getting new resistance band exercise ideas so when I travel I can bust out my bands anytime/anywhere and still get a decent workout in.
I refueled with a zucchini and eggplant cheese “pie”. Smothered in red chili flakes, obvs. This pie isn’t my recipe – It’s out of my favorite cookbooks in the entire world: Simply in Season. I’m actually planning a post of all of the meals I’ve made from the cookbook- aka my food bible. And I’m pretty sure I’ve made 85% of the recipes in it :)
Although we’ve basically had a heat stroke the past couple of days, it’s supposed to be nice a chilly this weekend (high 50s, low 60s) and I can’t wait! Bring on the baking, open windows, tea, sweatshirts and snuggles. And maybe another veggie pot pie.
Today is a day that I will never forget what I was doing on 9/11: I was in 8th grade and outside for our morning recess. I had no idea what was really happening, but remember all of the teachers looking panicked and scared. Keeping everyone who was affected my the tragedy in my heart today. #neverforgetAre you a savory pie fan? I just realized that I pretty much everything I eat is savory…including my pies. Is that weird?
