what exactly is gluten-free flour? i wasn't aware there was any such flour. i thought people had to use rice flour or something

Gluten free flour is a combination of flours made from non-glutinous plants etc. The idea is to combine different textures to make one similar to regular flour. It is successful in most ways, however rising and kneading becomes way more difficult!
