What about a low-fat or fat-free salad?

Posted Jun 26 2009 7:10pm

I have one word for you: puke!

If I eat at a restaurant in America, I will usually ask for the dressing on the side simple to not have my salad swimming in dressing and not because I intend on eating my salad without any dressing just like a rabbit would.

I’ve heard many women say they never put any oils on their salad and when I hear that I just want to say “puke”!

I take so much care, attention and dedication in preparing my salads and salad dressings, it would be unconceivable for me not to pair the two together so that I can have an explosion of flavours in my mouth.

See, this is another reason why people say they hate salads … if you’re just eating the salad without salad dressing you’re just torturing yourself for no good reason.

Other than the benefits of added taste, adding good quality oils like olive oil, flax seed oil, pumpkin seed oil (you can also buy combinations of essential fatty acid oils at your natural health food store and at many grocery stores now) or grape seed oil also helps your body better absorb some of the yummy addition to your salad.

If you like to add red peppers (rich in capsanthin), green peppers (rich in lutein) or tomatoes (rich in lycopene which has been keeping people eating the Mediterranean diet healthy for decades), then adding oils will not only help those vegetables taste better, but it will also help them get better absorbed by your body.

In fact, researches have proven that cooking your tomatoes with olive oil will enhance the antioxidant power of the fruit (tomatoes are part of the fruit family and not the vegetable).

Here’s another combination  that you can try that works quite well as well: a spinach and boiled egg salad, a spinach (or mesclun mix) with avocado or add a handful of nuts to your leaves … all of those salads are combining leaves with good fats that will do your body good!
