what’s for lunch?

Last week I talked about dinners . Now, let’s talk lunch!

I’ve said before that if there is a least important meal of the day, lunch is that to me. I mean, I know all meals are important (believe me, I know!), but I’m usually in the middle of cooking or baking when lunchtime rolls around and more often than not, just end up throwing together something super simple and quick to eat.

To help get myself out of a self induced lunch rut, I decided to take some photos of my lunches last week and share them with you. I figure we can inspire each other…and then go eat some chocolate .

Kale salad , gardenburger, cherries, sourdough english muffin with butter

Leftover meatloaf (with ketchup and sriracha), cherry vanilla breakfast cake , sliced pear

Grilled cheese and tomato soup (!!)

Fried egg with sharp cheddar cheese on a sourdough muffin with blackberries

Salmon salad with spicy hummus, pickles and feta on artisan bread with kiwi

To be honest, I think my most typical lunch is a fried egg sandwich! I always fry my egg in a little butter and cook it quickly so the yolk is still a little runny and delicious. I’m pretty sure I could eat fried egg sandwiches every day for the rest of my life and be very content.
