Weekend Recap: The Four Fs!

Hi folks! I missed posting Monday for a weekend recap but in all honesty…I forgot! Oops. That doesn’t mean I didn’t have a great weekend though.

Here is a little recap from the past few days broken down in Fun, Fitness, Fashion and Food…my favorite F words.

Fun!

The most important thing that happened this weekend was that I got the chance to celebrate a big event with my old roommate and friend, Marlene. Saturday night was her bachelorette party!

Marlene and I met shortly after I moved to Boston over 7 years ago and quickly became friends. We also were roommates for about 2.5 years too. Her wedding is in India around Thanksgiving and I won’t be able to make it (holy jacked up flight prices!), but I am so excited for my sushi partner-in-crime! If I’m not inundated with photos when she returns then I’m going to hunt her down and give me a personal slideshow. True story.

Fitness!

Saturday morning I went to what is quickly becoming part of my weekend routine, kettle bells class. We had a sub and he tried to kill me. Seriously. We had barely even finished the warm-up part of the class and I thought I was going to have to lay down in order to prevent a heart attack. There were mountain climbers, burpees, clean & press, crunches, and all types of other things that sound harmless but are really just torture. I was proud of myself for making it through the class though. I was even more proud of myself for not slipping in my own sweat on the floor like the girl next to me did. We both got a little chuckle out of that one. Mostly because we both know that my time will come.

I’m also participating in a  challenge at work to walk the most miles each week. The FuelBand ( check out my review !) is on permanently this week now and I’m hoping for 3 miles each day and a few more on the weekend.

Also, I discovered that Korky has taken up my yoga mat as his permanent napping spot. I knew it felt warm the past few days when I would go to use it. I can’t figure out if I think this is cute or absolutely disgusting.

Fashion!

I bought skinny jeans. They do not make me look skinny. Who knew?! As a matter of fact the first pair I tried on were in my size. I put them on and they were so “skinny” (i.e. tight!) that I felt totally uncomfortable. I started to sweat as I was taking them off and was about to give up. Then I decided to try on the next size up (and totally ignore the size tag) and was pleasantly surprised. They fit pretty well and looked pretty nice. If I hear snickering I will know whats up.

Food!

This past weekend was pretty uneventful for food, but I did have big plans for cooking last night. I tweeted out that I was trying out a Pinterest recipe. The number of “Good Lucks” I got was a little worrisome. Did I need that much luck?! Eh. Probably. Fortunately, luck was on my side and I totally made a home run.

Cauliflower Pizza Crust!

I pinned this recipe  a couple of weeks ago from Fat Girl Trapped in a Skinny Body.  I started to see variations pop over the past week or so and decided to give it a try.

WINNER!

I only made a few changes:

-I added onion powder, garlic powder, and a little S&P to my crust.
-I did not add basil to the crust.
-I baked it for 15 minutes on the first round.
-I made the ricotta mixture but used chopped up green onions instead of basil.

The only additional thing that I would have done differently is to bake it for a few extra minutes on the second round when the toppings and sauce were put on. The crust absorbs some of the liquid from the sauce and needs time to crunch back up.

Honest opinons: I loved it! The texture was almost like an omelet. It was fluffy and light. I loved adding whatever toppings I wanted (mushrooms & onions!). The recipe makes enough for 4 pizzas and one was more than enough for a serving. Mine clocked in at around 315 calories with toppings. Now, don’t be silly. This isn’t going to taste JUST like pizza crust. But it is going to a nice tasty alternative.

This week is going to be a busy one! The first of the month always filled with promises of being productive and successful and I’m working on making that happen. First up, dinner with the girls! I WILL be productive on enjoying some wine and a bunch of giggles. ;)
