I realize that I am really bad with posting on the weekends! Oh well, I guess I am just pre-occupied with other things! But, since I am not so good about the weekends, I will still do a little recap for you! Let’s see, where did I leave off…. FRIDAY! Friday night, Gregg and I went to Riptide for dinner. It was okay. When we got there, they told us it would be about 20 minutes before we could get seated. So, we went to the bar to have a pre-dinner drink. I knew what I wanted, but they didn’t have it on the drink menu, so I asked if they had my favorite drink of all time, Sangria. He said they didn’t have any, but he could make me some! I was so excited, because usually they don’t even know how to make it on the spot! But, he did and it was wonderful! So, we sat and had our pre-dinner drink and watched some football that was on. After about 30 minutes, the hostess was ready to seat us. So we went to our seat and started looking over the menu. We both decided to share the Lobster Lettuce Wraps for an appetizer. I ordered the baked Tilapia and asked for all veggies instead of rice. Gregg ordered the Crab-Stuffed Shrimp. So, we got the appetizer and let me tell you, it was awesome! The lobster was ground up and mixed with a sweet chili sauce. I think it had a little bit of mayo in it, but it wasn’t too heavy.
Both of our entrees came with the house salad. This salad was below average. It was your basic house salad (lettuce, onion, tomato and carrot) with a house dressing. The house dressing was a vinaigrette dressing and tasted old. There was a very unique after taste to it, and it tasted like it had been sitting in the fridge way too long. Needless to say, I didn’t eat much of this. Then came our entrees. I was excited for this because this is my favorite kind of fish because it is so light and can be paired with almost anything. The waitress put it down in front of me and all of my expectations were crushed. I don’t know if I have the wrong impression of what baked is supposed to be, but this was swimming in butter, it looked fried. So, I asked our waitress if it was baked and she said yes. So, I asked for some napkins and soaked up all the butter that I could. Once that whole process was done, it was okay to eat and it was pretty tasty. But, a good meal shouldn’t involve so much work. The waitress told me there is no was to bake the fish without using butter. Oh really? How the hell have I been baking my fish without butter??? Needless to say, I don’t know if I will be going back there anytime soon.
Saturday, Gregg and I invited his mom to go to the apple orchard with us. We went to Apple Holler and had their breakfast buffet. I had a little bit of everything including scrambled eggs, hash browns, a piece of chicken sausage, some fruit, oatmeal, a mini piece of cornbread and some french toast. I know, it sounds like I ate the whole restaurant, but I really did only have a sample of everything, except the french toast. They make the best Apple-Raisin French toast ever! It was so moist and flavorful, that I had to have 2 pieces (which is actually 1, because they are cut in half). After breakfast, I had a glass of hot apple cider and went to the apple orchard. Most of their apples were picked so we just got a bag of Honey Crisp apples and I also got some pumpkin crunch (pumpkin flavored popcorn). After that we went to a different place to get some pumpkins. We still have to carve them yet, so I will post on that later. When we got home, we were stuffed. We skipped lunch and just opted for dinner where we had turkey sandwiches and soup.
Then, yesterday I did the Heart Walk with my mom downtown. I made her and I breakfast, cereal mixed with yogurt and some english muffins with peanut butter and some pumpkin butter. When we got to the heart walk, they had apples, water, granola bars and coffee. I just had an apple and some coffee (about 3 cups of coffee!!!) After we had our coffee, we were off to walk. We opted to do the longest walk which was 5 miles. After the heart walk, I took my mom to Whole Foods. I bought a few things such as polenta, greek yogurt, tofu, puffins, larabars and some clif bars. When we got home, I was starving! So, I made a mess. This one had cottage cheese, pumpkin, peanut butter, cinnamon and Kashi Honey-Kissed cereal!
A few hours later, Gregg and I were planning on having spaghetti for dinner, but we just weren’t feeling it! So, we opted for French Toast AGAIN!!!!! Except, I used some new bread, Cranberry Walnut to be exact:
All I did for this was take 3/4 cup of egg beater and some cinnamon and put it in a bowl. I then took the bread and dunked each slice in the egg beaters to coat both sides of each piece. I then placed all 6 pieces on a griddle and cooked until both sides were golden brown.
We also shared some apples and grapes because we were both that hungry when dinner rolled around. I had 1 piece of the cranberry bread and 2 pieces of whole wheat bread with the grapes and apples. For dessert, I had a few scoops of key lime ice cream!
Then, this morning, I was in a hurry and couldn’t eat at home because I had to be at work by 5:30!!!! So, this was my b-fast to go! Yogurt, an apple, Kashi Honey-kissed cereal and a bagel with cream cheese. Thats all for now, have a great day!
