Watermelon, Avocado, and Spinach Salad

Good Afternoon and Happy Sunday!

I hope everyone is having a good day.  It has been a productive day for me so far.  I went into work and trained 5 clients and then came home and have been doing a bit of cleaning up around the house. We are having friends over to eat next Saturday and I thought I would start some of my cleaning/de-cluttering projects now.  We have only lived here for one year and I can't believe all the stuff we have already accumulated.  We have not fully unpacked from the move-- so sad, and I have been putting off those projects for quite some time so I tackled a few boxes today and am SLOWLY making progress.


But by now you have probably figured out that I would much rather be in the kitchen cooking than cleaning.  So I did take a break for lunch and made the most delightful salad.  I absolutely love watermelon and now is the time to eat it so I made a Watermelon, Avocado and Spinach Salad.




Watermelon, Avocado and Spinach Salad
2 cups spinach, chopped
1 cup watermelon, diced1/2 cup cucumber, diced3 sliced avocado, diced2 tbsp red onion, diced
Dressed with:
1 tsp Safflower Oil1 tbsp dijon mustard1 tbsp balsamic vinegar
This was a super tasty salad.  Very clean and fresh tasting and the sweetness of the watermelon played off the creaminess of the avocado perfectly.  I will definitely be making this again and may add a bit of feta cheese for that salty bite!
To me, watermelon screams summer and is a good thirst quencher on a hot day.  The best part is that Watermelons are low in calories and very nutritious. Watermelon is also high in lycopene, second only to tomatoes. Sweet, juicy watermelon is actually packed with some of the most important antioxidants in nature. Watermelon is an excellent source of vitamin C and a very good source of vitamin A .  So you can feel good about eating that salad as well!
