This was a super tasty salad. Very clean and fresh tasting and the sweetness of the watermelon played off the creaminess of the avocado perfectly. I will definitely be making this again and may add a bit of feta cheese for that salty bite!
To me, watermelon screams summer and is a good thirst quencher on a hot day. The best part is that Watermelons are low in calories and very nutritious. Watermelon is also high in lycopene, second only to tomatoes. Sweet, juicy watermelon is actually packed with some of the most important antioxidants in nature. Watermelon is an excellent source of vitamin C and a very good source of vitamin A . So you can feel good about eating that salad as well!
