One of my favorite things in the world is carrot cake. I don't eat it often, due to a) lack of opportunity, b) lack of motivation to make it myself and c) cake's tendency to have less than favorable effects on one's body.
The breakfast cookie, on the other hand, is a canvas ripe for experimentation and is inherently healthy, so here is today's attempt at a carrot cookie for breakfast.
1/2 cup kamut puffs
1/4 cup shredded carrots
1/2 Vanilla Dream YouShake dry mix (equivalent to about 1/2 scoop vanilla soy protein powder, nutrition-wise)
I'm not sure I quite fooled myself into thinking I was eating carrot cake for breakfast, but it was a damn fine breakfast cookie. :) My only complaint would be that it didn't hold me very long. In fact, neither did my lunch of leftover jambalaya. I had this annoying empty, unsatisfied feeling all day. Blame the hormoneys, I guess.
I gave in and had my snack a little early, and only then did I feel a little better (though still sleepy!) This is my latest snack obsession (whenever I'm not eating bars, that is):
1/2 cup cottage cheese with cinnamon and 1 tbsp each carob chips, Newman's Organics dried cranberries and wasabi peas. A match made in trail mix heaven! Cottage cheese always gets me through 'til dinner better than any bar, no matter how much "protein" that bar may contain.
I had my not-so-annual physical after work, and after being deemed supremely healthy (my words, not the doc's), I continued my junk-food-in-disguise theme with homemade black bean burgers for the roomie and me. So good! (And so cheap, not that I'm concerned with such things...)
I used this recipe and didn't modify it, but it's a good one for experimentation.
1 can black beans, drained and rinsed
1/2 small onion, chopped
1/4 cup salsa, extra liquid drained
3 cloves of garlic, chopped
1 tbsp cumin
1/2 cup rolled oats
Flex your guns:
In a medium-size bowl, mash the beans thoroughly with a fork
Add onion, salsa and garlic and stir
Beat egg in a separate bowl with the cumin (and hot sauce, if desired)
Add egg mixture and oats to the batter and stir well
Form into 4-6 patties (I made 4, they were a nice size)
I conveniently ignored the part of the instructions that says to freeze these patties and cook them some other time because they will stick together better after having been frozen and defrosted. Oh well, they ended up staying together fine. I just sprayed a skillet with a little EVOO and cooked two patties for the roomie and I over medium heat for a couple minutes per side, til browned. I did freeze the other two patties, so I'll let you know how they come out by comparison.
This is a great homemade burger formula, and we really liked them topped with some lowfat jalapeno cheddar and avocado. The Sabra Chipotle Hummus made for a perfect dip - I LOVE THIS HUMMUS BRAND! But one warning: the chipotle flavor is muy caliente. Along with all the less spicy stuff on my plate (just some roasted broccoli and brussels), however, it was awesome. The richness of the cheese and avocado mellowed it out a bit anyway. It's a keeper!
We attempted to watch Rachel Getting Married and got to within 10 minutes of the end when our DVD player started acting up. FRUSTRATION! I hate it when DVD players do this.
Nothing a little dessert won't cure, I suppose.
Too bad this was a poor excuse for dessert! Sorry, but I am not a fan of these new bars. I won't be spending any actual money on them. I figured a "candy bar" would go well with my "carrot cake" and "cheeseburger", but this one failed to hit the mark, even as a dark chocolate raspberry almond flavored granola bar. They can't all be winners!
