Add me to the list of folks who have made and LOVED Kath'sNutty Vanilla Sweet Potato + Kale Soup!

It's seriously an incredible recipe, and not hard at all, so do try it if you have a chance! I followed her recipe exactly, so just go to the link above to try it yourself, and get ready for a souper taste-splosion.

I also followed Meghann's example of pairing the soup with her adaptation of whole wheat stovetop biscuits. What a winner! They take a bit of time to cook (26 minutes), but mere seconds to throw the batter together in the first place, so I just timed them to be done at the same time as the soup. I topped one biscuit with just a bit of real butter, making this meal such a treat, and I'm even more proud of myself for making it because I really did not feel like cooking tonight, despite going out and buying the sweet potatoes and kale for the soup recipe. Now, not only do I have a great meal in my belly, but leftovers for three more repeats! This means I can take a raincheck on that laziness for next time I want to eat this soup. :)

Speaking of treats, what's that I see nestled into my oats from this morning?

I can't imagine where a mini Reese's peanut butter cup would have come from on the day after Easter. ;) Don't judge, you would have done the same thing if you had discovered that you had but a wee drop of Barney Butter left in the sample packet.

This was a simple no-plan-required Monday bowl of:
  • 1 packet Kashi Go Lean Honey Cinnamon hot cereal
  • 1 banana
  • water
  • wee dab of Barney Butter
  • 1 Reese's mini peanut butter cup

I keep a box of the Kashi oat packets in my desk, so I just bought a banana on my way into the office and microwaved the two together. Doesn't get much easier without buying something from Starbucks or whatever! Still, you might want to think ahead a bit if you're not the type to carry Barney Butter samples around in your purse...not that I do that...

I should also mention that having a large supply of free Kombucha drinks in my fridge is doing nothing for keeping me from full-blown addiction.

The grape flavor goes down especially easily. Reminds me of pizza parties at Chuck E. Cheese with grape sodas...back in the days before I knew what probiotics were, when pizza was a food group all its own...

Speaking of multivitamins (huh?), Fitness Magazine's April issue has a great article about vitamins and choosing a multi-supplement, which you can read online here. There is a lot of conflicting advice floating around, which has led me to question whether or not I should bother taking a multivitamin or not, but this article convinced me to at least go with a middle ground of taking one every other day (my doctor OK-ed it too). It also answers such burning questions as "Why does my multivitamin turn my pee such a bright shade of yellow?"

I do eat well enough that I get the majority of nutrients that I need from food, which is the best source, but for those of us who eat little or no meat, for example, it is easy to come up short on iron. Calcium is another crucial one for women, of course, so I will continue taking the multi several times a week to make sure my bases are covered. I like the Trader Joe's women's formula, which I have found is the least likely to make me barf it back up.

Also in the realm of interesting health reads is an article from Prevention.com, which highlights seemingly unlikely Healthy Power Pairs in nutrition, behaviors and medical tests. I always knew that there must be a scientific reason why pizza night is best chased by Ben & Jerry's Chocolate Fudge Brownie fro-yo...
