Che is a traditional dessert from Vietnam that roughly translates as “sweet soup”, or “sweet pudding”. I’ve posted before about che dau do , sweet red bean soup, as che is commonly prepared using beans or grains. Today, though, let’s have a look at the base of all of these varied desserts: plain che.
This is my co-worker’s recipe again, who loves to treat me to Vietnamese treasures at least as much as I love to gobble down everything she offers.
- 1/2 cup plain peanuts
- 1/4 cup sugar
- vanilla extract to taste
- 14 oz sweetened coconut milk
- 1/2 cup tapioca jelly cut into strips
1. Bring coconut milk to a quick boil, stir in sugar and boil for 5 minutes to thicken mixture. 2. Turn off heat, stir in vanilla extract, peanuts and tapioca jelly, and let cool.
Quick and easy – wonderfully sweet yet refreshing! Replace peanuts with nuts of your choice if desired and enjoy.
