Vegetarian Chinese Beef And Broccoli

Who doesn’t love beef and broccoli? After our China stay, it was one of the first things I decided to whip up at home for comfort. But in a low calorie, and vegetarian way, since I don’t eat meat all that often. Of course you could substitute lean ground beef and extend the cooking time before adding the broccoli. This is simple, delicious and filling and just what a stressful day at work requires, and a great way to use your CSA-provided broccoli.

Ingredients - 1 head broccoli
- 1 packet soy crumbles
- 1 tbsp reduced sodium soy sauce
- 1 tbsp dark rice vinegar or balsamic vinegar
- 1 clove garlic, chopped
- 1/2 hot pepper, diced
- 1 tbsp ginger, diced
- 1/4 cup water

Steps 1. Chop the broccoli into florets and steam for 5 minutes in the microwave with a bit of water.

3. Spray a large pan with cooking spray and brown the garlic, pepper and ginger

4. Add the soy crumbles and heat for a minute or so.

5. Add the steamed broccoli, soy sauce, vinegar and water and cook for another 5 minutes, stirring occasionally, until sauce has reduced. Dig in!
