try a stir fry with a healthy sauce and some noodles and protein. This way you aren't getting just veggies. You can also try sticking them in omletes or pastas or burgers. Disguise is my fave way.
Also remember that 1/2 c pasta sauce is a veggie. So, if you top whole wheat noodles w/ 1/2c tomato sauce and chopped/sauteed carrots or other non green, then you have 2 of your 3 veggies in one tasty meal!
GREAT greens:
thin asparagus broiled with evoo, salt, fresh cracked pepper, and thyme (awesome dish, guys like it too).
broccoli sauteed in evoo, garlic, salt and pep with fresh parm cheese ontop (bomb diggity!)

What are some good beginner vegtables to try considering I don't like green things
