Good Afternoon and Happy Tuesday!

Summer is underway and we are all adjusting to our new summer schedule.  Emmet is attending a cool Digital Moviemaking for Tweens Camp at NW School of Film this week.  He is really enjoying it and I am excited to see the movie at the end of the week.

Make a dramatic movie in five days! The pace will be fast, but you'll learn the basics of working together as a movie crew, operating a professional-level digital video camera, directing actors, sound recording, and digital editing with Apple Final Cut Pro. At the end of the week, a short drama will be "in the can." The week will culminate in a family screening, complete with popcorn. Completed films will be uploaded to a special class online video album.


Zoe and I have been hitting the tennis courts daily and she has really got the tennis bug.  It is exciting to see her improvement day to day.  We also have been talking a lot about health and nutrition and one of Zoe's questions was, "What does Gluten-Free mean?"


I explained that gluten is a protein found in certain grains: wheat, barley, rye, tritacale, spelt, farro and kamut and that some people have celiac disease and need to steer clear of anything that contains gluten. It made her sad that some people can't eat bread and then she remembered seeing all the different gluten-free options at Whole Foods.  She then wanted to try some gluten-free bread and thought it would be fun to make gluten-free banana bread!  We had a pack of spotted bananas so we went town and made a loaf of Banana Chocolate Chip Bread that was free of gluten as well as vegan.  Zoe 
suggested we put in some chocolate chips just in case the bread didn't taste good: )  A little chocolate makes everything better and I believe that the Trader Joe's brand of Chocolate Chips are vegan or I hope so since I am claiming that this is a Vegan recipe.



Vegan and Gluten Free Banana Chocolate Chip Bread
recipe adapted from Whipped Yields 10 servings (1 slice) Ingredients: 2 cups Bob’s Red Mill Gluten-Free All-Purpose Baking Flour 2 teaspoons baking powder 2 teaspoons baking soda 1 teaspoon xantham gum 2 tbsp ground flaxseed 1 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon allspice 1/2 cup coconut oil, melted 2/3 cup agave nectar 2/3 cup unsweetened coconut milk beverage (I used So Delicious brand) 1 teaspoon pure vanilla extract 1 1/2 cups mashed bananas (about 3) 2 cups chocolate chips (vegan) Preparation: Preheat oven to 325 degrees and lightly grease a 7 x 4x 3 inch-loaf pan. Whisk flour, baking powder, baking soda, xantham gum, ground flax,salt, cinnamon and allspice in a medium bowl. Add 1/2 cup coconut oil and agave nectar, milk, and vanilla to dry ingredients and stir until smooth. Using a plastic spatular gently fold in bananas and chocolate chips. Fill prepared pan with batter. Bake on the center rack for 35 minutes, rotating 180 degrees after 20 minutes. Cook until when you press on the loaf is bounces back slightly and a toothpick comes out clean.  My loaf took close to 55 minutes to bake.  So check frequently. Let banana bread cool completely before inverting on a cutting board to cut.



This banana bread is absolutely delicious.  My kids were surprised about how good it tasted.  Little did they know that I make many of my baked goods vegan and gluten-free but just don't announce it.

I am afraid to admit that half of the loaf is already gone because they "think" this is healthy.  I guess there is worse things that they could be eating:)




So by now you have probably guessed that I am a bit obsessed with Kathy Freston's The Lean book.  As a Health Coach I am always exploring new dietary theories and ideas and when I stumble on approaches that resonate with me and that I can recommend to clients I get a wee bit excited.

Now first, I must disclose that yes, this is a book written by a vegan and the gist is to eat a more plant based diet.  I personally am a Flexitarian who strives to eat a more plant-based diet.  I am not much of a carnivore but have not given up all dairy products.  I honestly believe that there is "no-one diet that fits all" and that you have to explore and experiment to find out what works best for your body.  That is why I love my job so much, I help guide people on a journey of self discovery and love seeing all the positive changes that it brings about to my clients.  So exciting!

Anyhow, I personally love the simplicity of The Lean and find thaTt anyone could benefit from this book whether you are a carnivore or not.  As Kathy states: "Leaning in" is about setting an intention for what you want, and then nudging yourself ever so gently in that direction, even if getting there seems impossible.  It's about making choices to eat foods that are delicious, filling and supportive of your weight-loss goals.

Big Bowl of Love Salad
2 cups of romaine lettuce 1/2 cup of cabbage slaw mix 1/4 cup of garbanzo beans 1/4 cup of red bell pepper 1/4 cup of orange bell pepper 1/4 cup of corn (I had leftover corn on the cob) 5 asparagus spears, chopped 3 slices of avocado diced 1 tbsp walnuts
Dressed with Carrot Ginger Dressing




This was a huge salad and I enjoyed every little bite of it.  Yum.  This truly was a bowl of love!
