Vegan Dark Chocolate Chunk Cookies

On my snow day I had a lot of free time between watching Millionaire Matchmaker, Tabitha's Salon Makeover (not my best moment) and The Biggest Loser on my DVR.  I got sucked in to way too many hours of that, but that okay I figure because it was a snow day/blizzard out and what else did I have to do? I decided I should do something productive and I started flipping through Eat, Drink & Be Vegan. I use that cookbook weekly to make different types of hummus and dip, but I have to be honest and say I haven't used it for anything else. I started looking through the dessert and I was drooling. I picked out a couple of things I wanted to make, but most things require different types of flour I didn't have.  I used the last of my spelt flour on the blueberry muffins I made, so I decided I would make my own decision to use whole wheat flour instead. 

The best thing about making vegan desserts is that you can eat the dough because it doesn't have anything that needs to be cooked in it! was GOOD.

Dark Chocolate Chunk Cookies
adapted from Eat, Drink & Be Vegan

1/3 cup unrefined sugar
1/3 cup dark chocolate chunks (I used 70% cacao dark chocolate chunks from Whole Foods)
1/4 tsp sea salt
1 1/4 tsp cinnamon
1/4 tsp grated nutmeg
1 cup minus 2 tbsp whole wheat flour
3 tbsp dark cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 cup maple syrup
1 tbsp canola oil
1/3 cup unsweetened apple sauce

Preheat oven to 350 degrees. In a bowl combine all ingredients, spices, flour, cocoa powder, flour, baking soda and powder, salt, except syrup and oil and stir well.  Add oil, maple syrup and applesauce. Mix until combined. (If it seems too dry, you can add applesauce a little at a time.) Add chocolate chunks. Scoop the batter onto baking sheets. Makes about 18 medium sized cookies. Bake for 11 minutes. Let cool for 1 minute and transfer to a cooling rack.
This makes for a healthy, yummy dessert. Trust me, these are the cookies to make for an after dinner anytime snack!
