Sautee onions and celery in olive oil with cumin, cilantro, garlic, chili pepper and salt.
Add the diced tomatoes and avocado and simmer for 1o mins.
Add black beans.
Simmer for 20 mins or until it reaches flavor and consistency.
Serve with avocado slices and corn chips!
NOTE – I really just added the celery to up the veggie content and because I had it on hand. You may do with or without or add your own veggies, depending on your preference. Chilis are flexible dishes!
