Vegan Black Bean Chili

There’s only so much minestrone a person can eat, so I decided to change it up in the soup department. I was thinking of doing a taco soup of  sorts, but then I decided to go with a vegan chili. 

Vegan Black Bean Chili adapted from ChooseVeg

Ingredients

  • 1 28 oz can of diced tomatoes
  • 1 16 oz can low sodium black beans
  • 1 cup chopped celery
  • 1 onion (diced)
  • 1 small avocado
  • 1 jalapeno (diced)
  • 1 tbsp of olive oil
  • 2 cloves of garlic
  • 1/4 chopped fresh cilantro
  • 1 tbsp chili powder
  • 1 tsp cumin
  • salt to taste

Instructions

  1. Sautee onions and celery in olive oil with cumin, cilantro, garlic, chili pepper and salt.
  2. Add the diced tomatoes and avocado and simmer for 1o mins.
  3. Add black beans.
  4. Simmer for 20 mins or until it reaches flavor and consistency.
  5. Serve with avocado slices and corn chips!

NOTE – I really just added the celery to up the veggie content and because I had it on hand. You may do with or without or add your own veggies, depending on your preference. Chilis are flexible dishes!
