Vanilla Ricotta with Warm Pears and Fig

Good Morning!

I have the morning off from teaching and am going to take myself to Bodhi Yoga for a nice hot and sweaty practice.  I really enjoy this class and am looking forward to it.  I got the kids off to school safe and sound and we are starting to get into the groove of things again.  It is getting easier to wake them up and they are really enjoying school.  Yah!

So I am a huge fan of Dawn Jackson Blatner, RD, she is the author of my go-to book, The Flexitarian Diet and she also contributes to Fitness Magazine.  In the September 2009 issue of Fitness Magazine she comes up with some great meal ideas in an article entitled Eat More, Weigh Less.  I always love the food section in Fitness Magazine and this article has some great ideas for breakfast, lunch, dinner and snacks.  I made the Vanilla Ricotta with Warm Pears and Figs this morning and it was "out of this world" good. 

It was a nice change for me and I really loved the texture of the ricotta cheese and the warm pears and figs made a nice sweet syrup that was delicious.  I loved it so much that I thought about having it for dinner as well since I have one more pear that needs to be eaten.  When I love something, I can eat it over and over again.  I highly recommend this recipe.  It would also be a great dessert.  It felt like I was eating something decadent and was a nice treat along with a cup of coffee.

Vanilla Ricotta with Warm Pears and Figs

1/2 tsp vanilla extract
1/2 cup low-fat ricotta cheese
1 red or green pear, chopped
2 dried figs, chopped
1 tablespoon chopped walnuts

Stir vanilla into ricotta cheese.  Microwave pear, figs and 2 tablespoons water in a bowl covered with a lid or plate, allowing a slight vent for steam to escape, for 5 minutes or until tender. Top ricotta with warm pear mixture and walnuts.  Enjoy.

I was excited about this supplement because I am already of a fan of GreenVibrance but don't always whip up my Green Vibrance Smoothies.  I don't like to drink my calories and find that I need to add a little something to take the edge off of the "green" taste. We shall see if I can keep up the good work and it also helps that I am able to get my morning run in before teaching Baby Boot Camp.  I am balancing the running with yoga and weights and am drinking a lot of water.  I am also enjoying my food and feeding my body what is seems to need.  Last night, I was craving peanut butter so made myself my favorite PB & Banana Raspberries on an Ezekiel English Muffin.

 
I think the funny thing is that even though I am at my supposed "happy weight", I still find that my lower half has not miraculously gotten longer and leaner and that my little pooch is still there so you really do need to learn to love the body that you are born with and be happy in your own skin. Right now, I feel like I am healthy and happy and ultimately blessed that I am able to run and do yoga and eat right so I am going to be stick with that and stop yearning to be taller and thinner!
