Vanilla Prickly Pear Spinach Smoothie – Packed With Nutrients And Flavor!

So as some of you know, I’ve had my issues with a month of no salt, no spice, no acid - utter blandness. This pretty much relieved me of control of my food, and, combined with the holidays and stress of defending my Ph.D., led to some weight gain. Now that I am back to regular food, I’ve joined an online workout challenge – the Best Body Bootcamp – to get my butt back in shape.

And in line with the greens love blog hop this month, I made my first ever green smoothie. Turns out people haven’t been lying in scores and you really don’t taste the spinach! But of course I had to make it a little more exciting and have decided to use frozen prickly pear , a cactus fruit, instead of berries or bananas! This has quickly turned into one of my favorite breakfasts and snacks – packed with protein, high in folic acid, vitamin A, C and potassium from the spinach and calcium, potassium, fiber, vitamin C and magnesium from the prickly pear! And only 124 calories, using the protein powder I use. You know you can’t resist!

Ingrdients - 1 frozen prickly pear
- 1 cup fresh spinach
- 6 large ice cubes
- 1 cup white tea or water
- 1 scoop vanilla protein powder

Steps 1. Combine all ingredients in blender. Blend. Voila!

Okay, so the color may not be as appetizing as, say, a strawberry banana smoothie, but trust me, this is delicious and so, so good for you!
