
Good Morning! TGIF!
I slept in an additional 15 minutes this morning... was wishing that it was already Saturday but heh, it is FRIDAY! I have a busy morning and then I am officially off for the weekend, so excited.
I made a wonderful breakfast this morning! We had some leftover cooked barley so I made a little twist on my favorite Vanilla Date Oats and used Barley instead. WOW! Barley is sort of a mix between oats and brown rice. I loved the chewy texture of the barley and will start incorporating this grain more readily into my diet!
"Barley is a wonderfully versatile cereal grain with a rich nutlike flavor and an appealing chewy, pasta-like consistency. Its appearance resembles wheat berries, although it is slightly lighter in color." My kids like to eat it just like brown rice, so thought I would give it a try as a substitition for my oats. You know I am a texture girls so this really provides you with some chew and I also splashed a little Silk Vanilla Soy Milk on them while they cooked so the combination of the chewy barley, silky milk and sweet dates made for a DIVINE way to start the day.
Vanilla Date and Almond Barley 1/2 cup of pre-cooked barley
1 tablespoon Silk Vanilla Soy Milk with Added Fiber
2 Dates, chopped
6 Almonds, choppped
Heat the barly and soy milk in the microwave for 60 seconds. Add dates and almonds and enjoy.
This week has just blown by and I am looking forward to taking a nice run this morning, weather permitting, I have new running music that is really going to make it fun! Then I will teach Baby Boot Camp and have a personal training client at Hill Country Fitness that I am excited to try out some new exercises with.
Then the rest of the day is mine! I am so looking forward to the weekend. We are going to a First Communion Ceremony for 4 of our cousins on Saturday and there is also a fun Spring Art Fest going on downtown that I would love to attend. I can't express to you the euphoria I have had all week with having completed yoga teacher training. I loved every minute of it but to be able to reclaim your weekends has put a smile on my face that I can't wipe off!
So the scale was only up a few ounces despite the Jumbo Cinnamon Bun that I enjoyed last night. I definitely still have Yogurt Planet on the brain as well, so might have to make a trip there as well, this weekend. Always planning out my little treats... keeps me going!
