Vanilla Coconut Cream Pudding (aka Fruit Dip) – Only 3 Ingredients!

Yesterday, I feasted on kale chips (yes, the entire batch), and today I ate a truckload of coconut cream pudding. I should call it fruit dip, but I didn’t dip anything — I just ate it with a spoon, half at lunch and half at dinner. It was not a couple days of great variety for me. And I’m ok with that—I was feeling uninspired and didn’t feel like going to the store.

Regardless, everything I ate was amazing.

Lately, I’ve been using a lot of high quality coconut products because I’m a fan of the medium chain triglycerides in the oil/cream, and the fiber and protein in the flour.

Note: Last time I talked about coconut, I mentioned that Tropical Traditions would have to give me a really good reason to switch over from Wilderness Family Naturals coconut products…and the next day, they had a buy 1 get 1 sale on coconut oil (so I bought 1 and got 1 for myself and my mom). So far, my honest opinion is that I like the Wilderness Family Naturals oil better (but Trop is darn good too!).

Vanilla Coconut Cream Pudding (aka fruit dip)

8oz refrigerated coconut cream – I use the Wilderness Family Naturals 8oz tetra pack (but you can used canned)
1 scoop of  vanilla protein powder – you can leave this out and just use vanilla extract if you want to (I used Jay Robb Egg White Protein—I accidentally ordered this instead of whey, and it works amazingly well in recipes that need a little vanilla fluffiness!)
1 dropper full of vanilla stevia -or- 2 Tbsp other sweetener (adjust amount to taste)

Mix all ingredients until smooth. You can do it by hand, but it gets fluffier and smoother if you use a mixer with the whisk attachment. You can eat it right away, but it will be even better after it chills and thickens in the fridge for a while.

Note: I realize this is so simple, it can barely be counted as a recipe. At the same time, it’s so good, it deserves a whole post to itself!

I love the texture of this. Maybe even more than the texture of dark chocolate avocado pudding...No, wait, I think I love them both equally in their own ways.

I tried to make a chocolate version, and it wasn’t as good—I used cocoa bean extract and cocoa powder…not great. But, I’ll keep tinkering. I have some strawberry protein powder, so I may try that next. I love how eating coconut fat makes my skin glow-y and not wrinkly!

This really would be a great fruit dip—it’s all fat and protein (swoon), so you really don’t need a lot to feel full.

Technically it's 8.45oz...not exactly 8. This recipe, like most of mine, are not based on an exact science---obviously you should always alter the ingredients to your own tastes (so taste test a lot!)
