tuscan potato mushroom soup (or something of the sort)

Tbh, this recipe is a combination of mushroom potato + Florentine potato tomato . I had planned to do the mushroom potato, but realized that I was low on mushrooms and had extra celery. Thus, the two became one.

Tuscan Potato Mushroom Soup


  • 1 16 oz can diced tomatoes
  • 1/2 cup mushrooms
  • 1 onion (diced)
  • 1/8 cup fresh parsley (chopped)
  • 2 cloves of garlic (diced)
  • 1 medium potato (chopped)
  • 1 head of celery (chopped)
  • 1 can of soup broth
  • 1 tbsp of olive oil
  • salt + pepper to taste


  1. Sautee onion in olive oil with garlic, parsley and salt and pepper.
  2. Add mushrooms, potato, and celery. Sautee for about 10 more minutes.
  3. Add diced tomatoes and soup broth and simmer until vegetables are cooked.
  4. Blend soup.
  5. Serve and enjoy!

This soup tastes like a really tasty and fancy version of tomato soup. I really enjoyed it!
