Turkey Bacon Wrapped Frittata Cups (Paleo)

I’ve made Mini Frittatas , and I’ve made a variety of different Paleo egg cups , but the other day I was in the mood for bacon and frittatas so I made veggie filled, turkey bacon wrapped, frittata egg cups. They came out so delicious, and you definitely need to try out this fast and very healthy recipe for yourself.


I diced up 1/2 of a yellow squash, 1/2 of a yellow onion, about 1 C of cherry tomatoes, and 1 Jalapeño.


I scrambled up 6 large eggs with a little water, and added the diced vegetables. Then seasoned with salt and pepper.


I really like the bacon to be crispy, and I’ve found if I bake it for a few minutes before filling the cups it becomes the consistency I like. I baked at 400 degrees for about 10 minutes.


The I added in the egg mixture and baked for another 15 minutes.


I loved the flavor of the bacon with the scrambled eggs and combination of veggies. The squash gave it a touch of sweetness and the jalapeño gave it a kick of heat.


Just like with the Paleo Egg Cups , these are a great breakfast choice or even a protein packed snack for the afternoon.
