Try this low-salt gazpacho recipe

Cold soup can be welcome relief during these hot late-summer days, but typically gazpacho is loaded with salt – 739 calories in one cup if you use the canned, ready to serve kind. If you’re trying to reduce the sodium in your diet, try this low-salt recipe offered by the Kansas City Star. Quarter and seed three tomatoes. Cube and seed a half a cucumber. Seed a red bell pepper and cut it into wedges. Peel and half two shallots. Add three cloves of garlic, 3 ½ cups of low-sodium tomato juice, 2 tablespoons of red-wine vinegar, 1 teaspoon of olive oil, ½ teaspoon sugar and only ¼ teaspoon salt.
