Tropical Fruit Salad with Banana dressing

Monday: Fruits and Vegetable Day!

The last day before grocery shopping, I usually have no fresh fruit.  But I did have a (only one) banana and we store lots of canned and frozen fruit.   So we decided on this tropical fruit salad. 

We defrosted a few frozen strawberries.   Opened a can of mandarin oranges, and a can of pineapple.  

The Dressing:

  • one banana
  • 1/4 cup light sour cream,
  • 2 TBL brown sugar, and
  • 1 tsp of lemon juice. 


We blended up all the dressing ingredients (including the banana ) in a blender and poured it over our fruit.  It was really delicious.  It made a perfect dressing.  By pureeing it less and leaving it a little chunky, it could also be used as a fruit dip.  I almost didn’t let my kids have some of this because I liked it so much.  But since I want them to eat more fruit, I gave in.


Using the banana as a base for our salad dressing is a great idea for those kids who don’t like the texture of bananasBananas have great nutrients to help with

  1. controlling blood pressure.
  2. Strengthening bones.
  3. protecting your heart.
  4. Preventing diarrhea.
