Tofu Pizza Pie

Posted Aug 26 2009 11:16pm

Ok, so today’s lunch looks grosser than it actually tastes. I swear, it’s tasty– especially when served cold! :-D

Last night, I made a Tofu Pizza Pie (recipe below). I combined tofu, zucchini, flour, and Parmesan cheese to make a pizza “crust” of sorts. The crust wasn’t firm like a typical pizza. It was soft like tofu, but not totally mushy. I topped the tofu crust with marinara, shredded cheese, and green pepper slices just like I would add to a regular pizza.

The end result looked ugly, but it tasted oh-so-delicious! Chilling the Tofu Pizza Pie overnight turned it into a soft, cold pizza! Mmmm! So delicious!

And I packed some dried apricots for an afternoon snack. I’ll probably pop into Starbucks for an iced coffee later on too. My cousin just started working at my favorite ‘Bucks location, so I want to say ‘hi’ and welcome her to the neighborhood! ;-)

I’m meeting friends for dinner and drinks after work at a new restaurant in the area. I’m really looking forward to it!

See ya later! Happy Hump Day! 8-)
