Tofu Artichoke Spinach Dip

Good Evening!  I hope everyone has had a great day. 

We had a great time going over to a friends house for dinner last night and I thought I would share the recipe for the Hot Artichoke Spinach Dip I made.  I found a cleaned up version of the warm, cheesy, spinach artichoke dip on the Vegetarian Times website.  I had to make a few changes to the recipe as well, because I could not stomach the fact that it contained mayo.  Mayo is cringe-inducing for me but if you enjoy it by all means add it into the recipe. Anyhow, this recipe is a real crowd pleaser and I could literally eat it for lunch or dinner any day of the week.  The key ingredient is Silken Tofu which adds a nice creaminess to the dip as well as protein! This recipe may be a bit trickier for my vegan friends but you could substitute the yogurt with veganaise, and use vegan cheese substitutes such as Heidi Ho Organics Monteray Jack .



Tofu Artichoke Spinach Dip
recipe adapted from Vegetarian Times website
Makes about 2 1/2 cups
  • 1 12-oz. pkg. light silken tofu
  • 2 Tbsp. Fage 2% Greek Yogurt
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp. onion powder
  • 1 15.5-oz. can artichoke quarters in water, drained, rinsed, chopped
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup gruyere cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Paprika for dusting
  1. Preheat oven to 400F. Purée tofu, yogurt, mustard, lemon juice, garlic and onion powder in blender or food processor until smooth. Transfer to bowl.
  2. Stir artichokes, spinach, jack cheese and Parmesan cheese into tofu mixture. Spoon into 8-inch glass pie dish or casserole. Bake 20 minutes. Dust with paprika; serve.
Honestly, this stuff is amazing and is a considerably healthier version than the traditional version which is made with cream cheese, and several other cheeses!
