Today’s Meals = ROYGBIV

Day 2 of no processed foods was filled with almost all the colors of the rainbow.


After a quick cardio workout at the gym, I came home and made quick zucchini pancakes (1 shredded zucchini, 2 egg whites, 2 tbsp. of mozzarella, 2 tbsp. of parmesan, and 1/2 tbsp. of flax meal).

It was a delicious way to start my morning!


Later that morning, I took Luna on a walk and got some studying done before making  lunch for Beccah and I- tofu vegetable peanut brown rice noodles.


I got antsy waiting for Dave and Brita to come home so started working on dinner- Provençal summer gratin to be exact!


Isn’t it pretty- zucchini, potatoes and tomatoes roasted to perfection.


To go with our gratin, Brita and I made kale avocado salad and Dave grilled organic lean beef burgers topped with goat cheese.
