Three Weekday Dinners

I can’t believe it is already Friday! In between giving the final for my Sports Nutrition class, cooking with kids, training clients in the gym, and getting down the list of opening my private practice – it has been a blur!

This has also been the second week where I have added exercise classes back into my workout schedule. I was having a hard time lifting more than once a week and decided that going to a class would help me.

My new workout schedule:

  • Monday=muscle conditioning
  • Tuesday=spinning
  • Thursday or Friday= Pure Barre

On days I’m not taking a class, I get in at least 5 miles of walking or do some cardio at the gym. 

Dinners this week have been simple due to our night time schedules. Tuesday night, Dave picked up a roaster chicken from Whole Foods with baby new potatoes and greens beans. I added baby romaine and polenta for a little extra pop!

On Wednesday, I made kale & butternut squash fries with grilled turkey burgers. Dave couldn’t get enough of the kale chips- it made an RD wife proud Winking smile We haven’t had kale s in awhile since I thought it was causing me to have Crohn’s discomfort but alas no pain- woo hoo!

Yesterday, after having a big cobb salad lunch out with Nys, I made pumpkin smoothies for dinner.  I took a cup of  frozen pumpkin puree, one small banana, two tablespoons of TJ’s pumpkin butter, 1/2 of plain greek yogurt,  and 1/2 cup of milk and threw it all in the blender.

Tonight, I’m heading out to dinner with Elise and Marcia to Bella Luna for a nice long catch-up!
